Whole John Dory with Salsa Verde

Ingredients:
4x 300-500gm john dory (heads removed)
1 bunch basil
1 bunch flat leaf parsley
1 bunch mint
80ml extra virgin olive oil plus 20ml for cooking
50g good quality anchovy fillets
50g capers
red wine vinegar (this is optional as the capers will add acidity)
1 lemon for garnish
Preheat the oven to 180°C.
The salsa verde can either be blended smoothly in a food processor or hand chop the herbs, anchovies and capers and mix with the Extra Virgin Olive oil.
Heat a non-stick frying pan to a medium heat, season the John Dory and fry until golden brown on both sides. Then drizzle with slightly more oil, transfer to a baking tray and bake in the oven for 8-12 minutes (depending on the size of the fish).
To serve plate the John Dory, drizzle with the salsa verde and garnish with a lemon wedge.
